Leider liegt dieses Buch (noch?) nicht in deutscher Übersetzung vor, aber wer Ed Brown verehrt, gerne bäckt und ein bißchen englisch kann, sollte es sich dann eben im Original zulegen. Back-Amerikanisch ist nicht besonders schwer zu verstehen, zumal man ohnehin schnell eine grundsätzliche Idee vom Aufbau der Rezepte und Anleitungen bekommt und daher notfalls erraten kann, was ein unbekanntes Wort bedeutet. Eine echte Herausforderung allerdings sind die Umrechnungen von Maßen, Gewichten und Temperaturen. Zumindest bei den meisten Mengenangaben hilft ein simpler Meßbecher, der neben Flüssigmaßen auch eine Einteilung für Zucker, Mehl und Reis oder dergleichen hat. Für "four cups of flour" kann man dann einfach bei der entsprechenden Flüssigmaß-Markierung durch das Gefäß peilen und erkennt das zugehörige Mehlgewicht. Von diesem Buch geht eine ungeheuer ermutigende Qualität aus - ich habe mich damit erstmalig an Sauerteig herangewagt. Es lohnt sich!

The best bread book I have used. A must have, as it is such a joy to read.My original 1970 copy was 'passed on' along the way so, as I again have more time for relaxing in the kitchen, the book is again in my store of cook-books. It is a joy to work with. Mr. Brown and the gentle souls at the Tassajara monastry have left their mark on thousands of souls, but probably not in the way they expected - through their stomachs.

My current copy of the Tassajara Bread Book is a 1970 edition, and it is still my favorite (along with Tassajara Cooking, which unfortunately doesn't seem to be available). It has stood the test of time over the years, too many great recipes to just single out one. The Whole Wheat Pancakes, with some fresh blueberries added, is my favorite way to spoil guests. The best thing about the Tassajara books is that they indeed show you a method for cooking or baking, not just recipes to be followed.
Oil stains, flour stains, unidentifiable traces of the years, I don't think I'll ever part with my original copy, but with binding paste falling out now each time I open it and the cover unattached, I think it's time to get an updated copy. You won't go wrong with this book!

I learned to bake with this book, every birthday cake for my son was their carrot cake. I too have lost my original 1970 copy to an ex. My son's ex. so now I am getting the new one, I will even try it in a bread machine! P.S. the date nut bread is to die for.

I grew up on home made bread, learned to bake bread from my Mother, then relearned how to bake bread well from The Tassajara Bread Book shortly after it was first published. It provides the right instructions for making bread from a sponge, tells you how to tell by feel when the bread is kneeded sufficiently ... and gives some excellent bread recipes - leavened, unleaven, quick and a variety in between. It has a recipe for Japanese vegetable pancakes that serve easily as meals or snack for small children. It has two dessert recipies - cream cheese bar cookies and peach kuchen that quickly become standards. In short, I highly recommend the book.
